Cupcakes in a Jar

thank you to all of you who commented or emailed me with prayers and uplifting thoughts for our struggling friends and family.... you really touched my heart and I am so grateful for this wonderful blogging community.
thank you. thank you. thank you.

I made some pumpkin cupcakes (because I am currently obsessed with pumpkin) for a few of the formentioned friends and thought I would share the super cute packaging with you...

start with the cooled pumpkin cupcakes, and a fresh batch of buttercream frosting, I also made some simple crumb topping (brown sugar, cinnamon, flour) layer cupcake bottom, frosting, crumb, cupcake top, frosting crumb each in the jar and top with a cupcake liner. I used a drink tray from McDonalds (=free) on the first set and just tied forks to the others...

Our Weekend in the mountains

We spent the past 4 days in the most amazing log cabin...
on the Cartecay river...
with 3 fireplaces...
a huge porch...
and a hot tub.

It was also Cole's first time to swim...
I am so thankful for my boys.

Happy Anniversary to me & the hubs.
{we've been pretty much celebrating since Sept! ha}

Pumpkin Whoopie Pie (the EASY way)

I've seen a few people post about Pumpkin Whoopie Pies... and they all look delicious! I decided to try my own last weekend (you saw a sneek on my 10 on 10 post) and I've had several emails for the recipe so I thought I would let you in on a little secret....

it was a box mix....

I'm committed to trying them from scratch too, but for my first try I just adapted a spice cake mix to create a heavier more pumpkin flavored cookie... they were a big hit! Yum! Yum!



What you need:
Box spice cake mix
2 eggs
1/3 cup butter
1 cup pumpkin pie filling or puree
1/2 cup milk

Preheat oven to 350F degrees. Line two baking sheets with parchment paper.
In a large mixing bowl beat the butter and pumpkin with an electric mixer on medium speed until smooth. Add all the remaining ingredients and beat on low speed until combined.
Using a small cookie scoop drop mounds of the dough onto the prepared cookie sheets, spacing them about 3 inches apart.
Bake about 10 minutes. (but watch them carefully) and cool completely before frosting...

For the filling:
I did a basic cinnamon cream cheese filling....
stick of butter, block (8oz) cream cheese, 3 cups of powered sugar, 1 teasp vanilla and couple dashes of cinnamon.... I put in in a pastry bag or you can use a Ziploc) and just made little cookie sandwiches!!

On an unrelated note... this has been an awful week... pretty much the past 10 or so days have wrecked havoc on friends and family... things are happening that are undeserved and it pains me to see people I love so much going through such tribulations....  it has really made me feel thankful and blessed. Hope you take some time today to count your blessings.... and have a wonderful weekend...
