Yall know I do not need a holiday to make cupcakes....
but when I saw these cuties on family fun I had to give them my own spin!
I did a cinnamon spice cupcake, with a vanilla buttercream frosting and a crushed almond topping. The groundhogs are almond joy candy bars (don't get the mini ones, there are 2 in a regular candy bar) the eyes I got at Michaels, the ears and cheeks are mini m&ms and the tooth is a dab of melted white chocolate.
I hope some of you have time to make these for Wednesday! They are super easy. Assemble the groundhog and then just stick him in the cupcake. If you can't make it to Michaels for the eyes, white chocolate with a dot of brown in the middle would have the same effect. Enjoy!
I don't know about yall, but I am praying for Spring to get here! Fast!

A couple of those guys looked right at me with one of thier eyes and wanted me to take them home! These are the cutest things I've ever seen. Your super creative brain would be a facinating place to visit!

I totally showed off this post to a friend at work. She was like "Have you seen these Groundhogs Day cupcakes?". I looked at her meager ones, and then showed off yours like a proud grandparent.
These are seriously adorable! I love the little eyes! I must look for them next time I'm at Michaels!
