You will almost never hear me use those words to describe any cupcakes I've made.
I rarely just make vanilla cupcakes...
however, we are having our new roof put on today
and the contractors blocked my car in.
So the cookies and cream cupcakes will have to wait till next weekend.
It is hard impossible to keep oreos in this house.
Recipe for the cupcakes:
3 cups unbleached all-purpose flour
2 cups sugar
1 tablespoon baking powder
3/4 teaspoon salt
1 cup (2 sticks) unsalted butter room temp
4 large eggs
1 cup milk (I used skim today. all I had)
1 teaspoon pure vanilla extract
Buttercream frosting:
I keep tweaking this...
added more butter this time...

1 1/2 cups (3 sticks) unsalted butter room temp
6 to 8 cups confectioners' sugar (start with 6 cups, I've never used more than 6 1/2)
1/2 cup milk
1 teaspoon pure vanilla extract (I had vanilla, but I used almond. I heart almond extract)

Almond extract is my absolute favorite in buttercream frosting! People always ask what I did different to it, and it's my little secret. It's like nutmeg, people forget about it, but there are so many uses for it!

Mmmm, these look lovely! My current favorite cake to make is a simple buttery yellow cake flavored with vanilla. It's the perfect base for all the summery fruit and berry toppings we're enjoying right now. Sometimes, simple is best!
