Pink Lemonade Cupcakes

Made these for a district wide meeting we had at work yesterday.

I love seeing the people I work with!

It is so nice to spend the day getting aligned.

(and eating cupcakes. Thats nice too!)

For cupcakes

1 package strawberry cake mix
1 (3 ounce) package strawberry gelatin
1 cup blended fresh strawberries
1/3 cup vegetable oil
1 & 1/3 cups water
3 eggs

**Bake like the directions on the box (I usually only leave mine in for about 15 minutes)

For Frosting
1/2 cup solid vegetable shortening
1/2 cup (1 stick) butter or margarine softened
1 teaspoon lemon extract (um. I used 3... oops!) But I wanted it extra lemon-y
4 cups sifted confectioners' sugar (approximately 1 lb.)
2 tablespoons milk
