Fun at the Fair

We headed to our annual county fair with my parents....

good cheesy clean fun. We loved it!

Pumpkin Whoopie Pie (the EASY way)

I've seen a few people post about Pumpkin Whoopie Pies... and they all look delicious! I decided to try my own last weekend (you saw a sneek on my 10 on 10 post) and I've had several emails for the recipe so I thought I would let you in on a little secret....

it was a box mix....

I'm committed to trying them from scratch too, but for my first try I just adapted a spice cake mix to create a heavier more pumpkin flavored cookie... they were a big hit! Yum! Yum!

What you need:

Box spice cake mix

2 eggs

1/3 cup butter

1 cup pumpkin pie filling or puree

1/2 cup milk

Preheat oven to 350F degrees. Line two baking sheets with parchment paper.

In a large mixing bowl beat the butter and pumpkin with an electric mixer on medium speed until smooth. Add all the remaining ingredients and beat on low speed until combined.

Using a small cookie scoop drop mounds of the dough onto the prepared cookie sheets, spacing them about 3 inches apart.

Bake about 10 minutes. (but watch them carefully) and cool completely before frosting...

For the filling:

I did a basic cinnamon cream cheese filling....

stick of butter, block (8oz) cream cheese, 3 cups of powered sugar, 1 teasp vanilla and couple dashes of cinnamon.... I put in in a pastry bag or you can use a Ziploc) and just made little cookie sandwiches!!

On an unrelated note... this has been an awful week... pretty much the past 10 or so days have wrecked havoc on friends and family... things are happening that are undeserved and it pains me to see people I love so much going through such tribulations....  it has really made me feel thankful and blessed. Baby Shower Cupcakes for Cami-Rose

Hannah's baby shower is today...

I wont be able to make it because I have to work (boo)

but I did make some cute cupcakes for her.

Red Velvet with little monogram buttons.

Hope your shower is beautiful Hannah! So sorry I can't celebrate with you all...

Wordfilled Wednesday: Fall to-do list

Fall is my favorite time of year

(although, sometimes I say it's summer, spring or winter)

It is also, by far my most busy time of year at work and at home.

Sometimes we get through the season and say...

"UGHHH!!!! I wanted to do ____ and I forgot"

or

 "I wish we had made time to do ____"

My summer to-do list was great.

Just a little reminder on my desk of things that I think are super fun and great for the season...

so I made another. Just for fall/winter. I dig it.
